Protein Breakfast

You just finished your morning virtual workout and you’re STARVING! Time to help those muscles heal and strengthen with some protein! You could scramble some eggs, fry some bacon… but have you considered Almonds? Yes Almonds! These little nutty nuggets are protein rich and chalk full of tons of other nutrients and benefits.

Don’t want just plain nuts? Try this hearty breakfast recipe:

ALMOND BREAKFAST BARS

Ingredients

  • 3 large cooking Apples
  • 1 cup / 90g Rolled oats
  • 1 cup / 150g Almonds

 

Instructions

  1. Soak the almonds overnight in water, in at least twice the volume of almonds.
  2. Preheat oven to 190C / 375F.
  3. Rinse and drain the almonds
  4. Core and cube all of the apples.
  5. Place everything into a food processor and blend for a few minutes until combined.
  6. Spread onto a pan about 12″ by 8″ lined with non-stick paper.
  7. Bake the breakfast bars for half an hour or until you can see the tops go golden.
  8. Take out of the oven and leave to firm up for 10 minutes.
  9. Remove from paper and separate and enjoy as they are or add any flourishes you like such as chopped banana or chocolate.
  10. Store breakfast bars in the fridge and enjoy within 5 days.
