MAGICALLY DELICIOUS COOKIES

The holiday season is the toughest time of year to be on a diet! With all the temptations of a variety of Christmas cookies, simply denying yourself is next to impossible.  So, why not try to find a healthier version of some of your favorite holiday treats?  Satisfy yourself, minus the guilt.  Capture the magic of Christmas with these Magic Keto Cookies.

These low carb, gluten-free, and keto friendly cookies are magically delicious. They are easy to make with only two steps and without any flour, you can feel good about eating way more than just one. Make sure neither your coconut oil nor your butter is melted. You want them both at room temperature, but solid or the cookies will spread too much while baking.

Ingredients

  • 1/4 c. coconut oil (solid)
  • 3 tbsp. butter, softened
  • 3 tbsp. granulated Swerve or Splenda sweetener
  • 1/2 tsp. salt
  • 4 large egg yolks
  • 1 c. sugar-free chocolate chips
  • 1 c. coconut flakes
  • 3/4 c. roughly chopped walnuts

Directions

  1. Preheat oven to 350° and line a baking sheet with parchment paper. In a large bowl stir together coconut oil, butter, sweetener, salt, and egg yolks. Mix in chocolate chips, coconut, and walnuts.
  2. Drop batter by the spoonful onto prepared baking sheet and bake until golden, 12-14 minutes.

 

Tips

Please note there may be some oil coming out of the cookies as they bake because there is no flour to absorb it. Let them cool on the cookie sheet for about 10-15 minutes then transfer them to a cooling rack with paper towel underneath.
