Kale-tastic Smoothie

Let me tell you about a nutrient dense vegetable that’s going to change your life: Kale!

Here are the Facts:

Kale is jam packed with vitamins: Vitamin A, Vitamin K, Vitamin C, Vitamin B6, Manganese, Calcium, Copper, Potassium, and Magnesium! In fact with the high content of Vitamin C, kale can help boost the immune system and fight colds. Kale has also been known for being able to lower bad cholesterol and in turn lower the risk of heart disease.

Are you impressed yet? If not, there’s more! Due to the high fiber and protein in kale, it helps keep you full longer and can aid in weight loss. Not to mention it’s low in calories! Which makes for a great snack or healthy salad! So, when you’re bored of lettuce, spruce up that salad with some kale.

A veggie like this is too good to be true! If you’re not interested in eating it with a salad, here’s an alternative recipe that will freshen up your summer:

Kale Pineapple Smoothie

INGREDIENTS
  • 2 cups lightly packed chopped kale leaves, stems removed
  • 3/4 cup unsweetened vanilla almond milk (or any milk you like)
  • 1 frozen medium banana, cut into chunks
  • 1/4 cup plain non-fat Greek yogurt
  • 1/4 cup frozen pineapple pieces
  • 2 tablespoons peanut butter, creamy or crunchy (I use natural creamy)
  • 1 to 3 teaspoons honey, to taste
DIRECTIONS
Place all ingredients (kale, almond milk, banana, yogurt, pineapple, peanut butter, and honey) in a blender in the order listed. Blend until smooth. Add more milk as needed to reach desired consistency. Enjoy this tasty treat immediately!
