It’s grilling season, so grab your “Kiss the Cook” apron, spatula, and meet me outside! I’ve got a tasty AND healthy recipe for you! The secret to this recipe is the pineapple chunks!
Fruit can be easily paired with, or mixed into, just about any entrée to jazz up the dish’s flavor. Pineapple has an over-powering sweet and sour flavor, that is ideally matched with more savory cooked meats to offer a “sweet and salty” combo- in this instance steak.

Also, one cup of pineapple only contains 82 calories, making it a great addition to recipes and helping the health conscientious! Grilled Steak & Pineapple Skewers
total time: 1 Hour 20 mins
Serving Size: 4-6
Ingredients
- 1 pound steak
- 1/4 cup pineapple cut into cubes
- 1/2 cup cherry tomatoes
- 1/4 red onion cut into thick cubes
- 1 yellow bell pepper cut into cubes
- 1 cup Italian parsley rough chop
- 3 cloves garlic smashed
- 1/2 cup cilantro rough chop
- 1/2 cup olive oil.
- 2 Tbsp red wine vinegar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon red pepper flakes
Instructions
- On a wooden or metal skewer, add pieces of the steak, cherry tomatoes, pineapple, bell pepper and red onion
- In a small food processor, blend the olive oil, parsley, cilantro, garlic, red wine vinegar, salt, pepper and red pepper flakes until well combined
- Pour half the chimichurri sauce over the skewers and marinade for at least 1 hour
- Then grill for about 10 minutes on each side, until the steak is cooked thru
- Serve with the remaining chimichurri sauce on the side and enjoy
