To celebrate spring, you should add some-more greens to your diet! Broccoli is a great veggie to start with!

These mini green trees are chalk-full of folic acid that’s necessary for the production and maintenance of new cells in the body. This super food also has high Vitamin C and K levels that help aid in circulation of the blood and wound repair. Vitamin C is also known for being a powerful antioxidant and protects the body from damaging free radicals. Another perk that many foodies are fond of, is that broccoli is high in fiber- then in turn aiding in digestion and weight maintenance.

With a combination of healthy exercise, rest, and relaxation, this delicious squash can be a wonderful addition to your new diet.

INGREDIENTS

  • 2 head broccoli, separated into florets
  • 2 tsp extra-virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 clove garlic, minced
  • 1/2 tsp lemon juice

DIRECTIONS

  1. Heat the oven to 400°F (200 C)
  2. In a large bowl, toss broccoli with extra virgin olive oil, sea salt, black pepper, and garlic. Spread out broccoli in an even layer on a baking sheet.
  3. Roast in the preheated oven for 15 to 20 minutes or until the broccoli stems are tender when pierced with a fork. Transfer to a serving platter and sprinkle with lemon juice before serving.
